Preparing Shellfish

There are many delicious shellfish dishes. Generally shellfish needs only a little cooking, and the simpler the dish, the better. Complex flavours may overpower the gentle sweetness of the shellfish.

That’s why dishes like moules mariniere - mussels in a simple garlic butter sauce - have become classics.

Other options include langoustines with spaghetti and a quick cream and white wine sauce. Or how about crab cakes with a chilli dipping sauce? Just don’t go overboard with the chilli or you risk overpowering the crab.
